The answer lies in the science behind the recipe. Tomatoes are naturally acidic and have a low ph.
We add natural sugarcane vinegar to bring the ph level to an optimum value at which if proper hygiene is maintained, no bacterial growths or spoilage takes place. Also, once we gently cook the tomatoes, lycopene levels increase which is a natural antioxidant and protects the colour so we do not need to add a chemical anti-oxidants too.
Once opened, the bottle must be placed in the fridge and consumed within 6-7 weeks.
